Set in the heart of the mill we have six boutique, ensuite bedrooms. During Lockdown 2.0 we have been upgrading the bathrooms with new wet rooms, added some TLC to each of the rooms to present a home away from home. We're not fancy, we're rustic, homely & friendly. When you stay with us, our goal is to allow you to escape, relax & enjoy the Mill. You won't find a better sunset anywhere in the country & if you're an early bird, you can enjoy the lake springing to life as the sun rises.

With the government road map we will be (RE) Opening our rooms from 17th May 2021

Introducing 🍹📦 Letterbox Cocktails our NEW Lockdown 3.0 offer. We began making these in Lockdown 1.0, then adapted them slightly, came up with some more ideas, recipes, mixes, then in Lockdown 2.0 we were asked to send some to a customers friend, which we did so they could Zoom together to celebrate a birthday. Then 💡💥💥 we said, why don't we figure out how to do this for everyone, so we did ❤️  

We've now built a bespoke bar in the pub in an area by the cellar we rarely used & we're sending fresh, handmade cocktails across the land for birthday gifts, thank you's, anniversaries, miss you occasions & so many more....

Social distancing we were told. Outside spaces if possible. That was back on April. So, we listened, we swallowed hard & we invested into one of the most incredible spaces in the UK. 


Now look what we've created!! Complete with a fully retractable roof in three sections, fully heated with the latest in technology & emissions, comfy for bums with padded seating & extremely comfy dining chairs. Come sun, rain or snow, we have it covered....

Wire Mill Saloon's pit masters stick to tradition

Georgetown’s residents made their living working at the Gilbert & Bennett Wire Mill, which opened in the mid 1880s. The mill primarily manufactured woven wire screens for windows to keep bugs out. It closed in 1989. The brick buildings are still in place, disheveled yet so architecturally interesting that someone is always planning to convert them into housing and stores. At this point the Wire Mill is still a ghost town. But plans are in the works to make it into a full-fledged community.

What is alive and thriving is the Wire Mill Saloon & Barbecue diagonally across the street from the old factory. There has been a renaissance of barbecue in Fairfield County, some OK, many awful. The exception to that dismal rule is the Wire Mill, whose pit masters truly know what they are doing and rein themselves back where other local barbecues try hard to be “creative” with often disastrous results.

Reading this you might surmise I am a bit of a barbecue connoisseur. Yes, I admit I am and my 40 years traveling all over the United States and writing about regional food has given me the chops to make this boast. The best barbecue in the country are humble places, like the Wire Mill. The art of barbecue takes a certain type of food-crazy person to stand next to a smoking pit and babysit a hunk of meat up to 16 hours as it slowly cooks.

Being a pit master is a very rough job, physically and culinarily, and few people have the talent or patience to do it correctly. Some of the most famous (but aging) barbecue masters around the country face the problem of finding this kind of commitment from the younger generations who find the lure of tending meat while it slow cooks (for a modest paycheck) a less than thrilling career prospect.

Owner and founder, Gino Marsilli, trained at the prestigious food school Johnson and Wales. He moved to Georgia, got married and then moved back to Georgetown where he opened the Wire Mill.

Marsilli’s father, Vinny, worked at the mill for 35 years and there is a vintage photo of him on the restaurant’s wall. Marsilli soon realized the small barbecue smoker he had bought for the restaurant was not up to the job. His father-in-law, Jerry Edwards, visiting from Georgia, went home and hand constructed a serious smoker that started the Wire Mill on its path to glory. Another legacy of the Edwards family is a trove of his wife Robin’s Southern family recipes.

The Wire Mill has a menu that includes all the barbecue classics: racks of pork ribs, smoked baked beans, pulled pork, hush puppies, coleslaw, fried dill pickles, beef brisket, homemade sausage and shredded smoked chicken. A happy “by-product” is the amazing tortilla soup, which includes this chicken along with avocados, cilantro, two types of long simmered beans and a mound of crisp tortilla strips.

I have not tasted one sub-par item on the menu; even the cornbread is great, unlike the tasteless blocks of yellow grain dished out at popular franchises, yet I am most attracted to the racks of ribs: glossy cinnabar meat that needs only a dab of sauce to make it perfect. The ribs taste just enough of the wood it has been cooking on, but not overwhelmingly so. To get this ratio right is not easy. Some barbecue places make the food gagging and smoky; others seem to be devoid of any taste of wood at all. The Wire Mill hits it spot on.

Another favorite of mine is the chili made from pork ribs. Again, as is the house style, it is elemental stuff, not duded up with weird or trendy ingredients. This is not Texas chili, which is made only from beef, has no beans at all, and is referred to by Lone Star natives as “a bowl of red.” I guess this is “Southern-style” chili or maybe “All-American” chili, but whatever you call it, it’s a winner.

The ambiance at the Wire Mill perfectly reflects the soul of Georgetown: unaffected, rooted in history and welcoming. In milder weather the tables outside on the patio draw crowds. If there is a chill in the air, large fiery heaters are placed next to the table. I love driving by this place at night and smelling the wood smoke and seeing the silhouettes of happy people by the dramatic flames of the heaters.

I like this location a lot. Its outdoor front patio gets an A for vibe, with cool locals, the right classic music, a fire pit, smoke smells from the barbecue, umbrellas on wire tables, at a sloping couple of streets so you can watch nice cars and motorcycles go by on a nice day and enjoy some excellent craft beers (like Maine Lunch) and some good barbecue. Everything is well-flavored (not bland) and well-prepared (textures and temperatures are there). No frills. I wouldn’t rave about the barbecue considering the outstanding barbecue-dedicated restaurants nearby, but I’ve never had bad food here. I like the barbecue! Normally I go for some meaty sandwich and sides and a beer midday or after a hike. Recommend. Been several times! It’s just not five-star.

Good eats in the heart of Georgetown. Everything we tried was really good and the prices we’re reasonable. We sat out on the patio and there was a live band playing, adding to the ambiance.

First time here today. Was googling bbq near me and chose this place due to the good reviews. Glad I did. Me and the wife ordered beef and pork ribs, pulled pork, sausage links and some sides. The ribs were moist and tender, not dry at all. Same goes for the pulled pork and sausages. Everything tasted soo good. The cornbread was also moist and tasty. Outdoor seating was great on a nice non-humid night. Will have to come back as this was some delicious bbq food. You won’t be disappointed.
